Hoppers are not airtight, so beans sitting in them stale faster than beans kept in their original packaging, and a full hopper commits you to one coffee at a time. Single dosing lets you switch between a single origin and a blend shot to shot, with no stale carryover between them, which is why it spread from specialty cafes into serious home setups. The catch is that single dosing only works well on a low-retention grinder. If the machine holds back several grams, you have to purge fresh coffee through it before each dose to clear the old grounds, which wastes the very freshness you were chasing. Hand grinders are also compact, easy to clean, quiet, and have little to fail, so a good one can last a very long time.
The cost is effort and time. Grinding espresso-fine by hand takes real wrist work, and that adds up if you pull several shots a day or make coffee for a household before everyone leaves. An electric grinder buys back that time and convenience, which is worth a lot if espresso is a daily, multi-cup ritual rather than a weekend one. What to prioritise on a budget
